Seville Orange Marmalade


675g (1 lb) seville oranges
1 lemon - juice & pips
850m1 (1 pt) water
1 and half kg (3 lb) sugar
Seville Orange Marmalade

How to make:

1. Wash fruit well. Using a potato peeler or sharp knife, remove rind from oranges and cut into thin strips. Halve oranges and lemon, squeeze juice and remove pips. Cut fruit into pieces. Tie fruit pieces into a piece of clean muslin with pips from oranges and lemon.

2. Place rind, juice and water into a large bowl add muslin bag. Cover bowl with microwave plastic wrap. Cook for 14-16 minutes on HIGH, until rind is soft. Remove muslin bag.

3. Stir in sugar. Heat on HIGH, until sugar has dissolved, stir-ring regularly. Bring to the boil.

4. Cook for 16-21 minutes on HIGH or until a set is obtained. Allow to cool slightly before potting. Cover. Makes approx. 2 kg (5 lb)
