Rhubarb Jam - Recipe


450g (1 lb) rhubarb - trimmed weight
450g (1 lb) granulated sugar
juice from 1 lemon

Rhubarb Jam - Recipe

How to make:

1. Chop the rhubarb into short even-sized lengths.

2. Arrange in a large bowl. Alternate the rhubarb and sugar in layers.

3. Pour the lemon juice over and cover with microwave plastic wrap. Leave overnight in a cool place.
4. Remove the cover and place the bowl with the rhubarb in the microwave and cook for 14-181/2 minutes on HIGH, until setting point is reached. Stir after 3 minutes, so that the sugar is dis-solved.

5. Pour into pots. Cover, seal and label.
